Chef Ruse has been making waves in the culinary industry for nearly a decade, assisting in the opening of Tableau at Wynn Casino in Las Vegas. He served as Executive Sous Chef for Eva Longoria’s famed restaurant “Beso”. Nicholas honed in on his skills while working in several mega hotel resorts including Bellagio Resort & Casino, “Element” Westin Hotel, and Soaring Eagle Casino & Resort. With a focus in fine dining, he has dedicated his career to perfecting his culinary craft. Studying under such notable chefs as Celebrity Chef Todd English as his sous chef in his flagship restaurant “Olives” in Las Vegas; Chef Mark LoRusso at Botero inside Encore Las Vegas; and Chef Steve Mannino at Rustico Restaurant; Bar in Alexandria, Va.
A Michigan native, Chef Ruse dove into the restaurant industry at an early age. What started as a position washing dishes and bussing at a little family owned restaurant down the street from where he grew up, quickly turned into a career after he was promoted to the kitchen only a few days later. Finding his niche and exploring his passion for the culinary arts, Chef Ruse enlisted in the military and earned a culinary certificate from the United States Navy.
